Why are players able to plant certain foods in this mode?

You are able to plant carrots and potatoes on basically any surface in the game which makes it a bit more difficult to eat those foods if you are in a hurry.
I'm not even sure what the point of this feature is as it would take far too long for those foods to actually grow for anyone to really take advantage of it.
At least Technoblade would be proud of the fact that he could set up a giant potato farm in the middle of a Skywars match?

It’s sort of like how you see floating flowers, they just place anywhere with BL’s different fun building style
