If that is you, seems like your eggs are overcooked and "clumpy". Eggs usually don't take too long to cook, it's best if it's still a bit runny but not too runny that it's like mush. Whatever "meat" you used, I suggest you cook that first and then add the beaten eggs and then scramble them for about a minute or two until they start clumping up. Once they do just remove it from the heat and continue "scrambling" them and then serve them.

That's just my take on it, I am far from a great cook. But I know how to cook an egg. XD
