This can be dependent on how far up we are in space I think
The islands in the air could be at ozone level which could lead to liquids not moving because of the little amount of gravity. Since the void doesn't show any sign of land anywhere, I guess it's safe to assume the islands in Skywars are in space.

Only thing I remember from my Science class are lessons from Geology like learning landforms, how hoodoos formed on Bryce Canyon, photosynthesis, things from Chemistry, I forgot some others.
