Could be different for you but for me that happened a few times before during past months due to weak WiFi connection so the game ends up not loading properly; I resolved it by closing and opening the app again or use a different WiFi/restart the WiFi in hopes for better WiFi connection. But if that doesn’t work for you since this seems to be occurring because of 1.17, then you could downgrade if you can.

The downside of this is of course it all clears the cache on stored on your phone means if you joined a server with some plugins... You'll needed to re-download it instead of bypassing this step...
