When I hit sign in, it just says it's trying to connect to Xbox Live and then stops

Try:

• Checking your WiFi/Internet Connection.
• Closing and opening the application.
• Restarting your device
• Uninstalling and reinstalling the application.
• If none of these can solve the problem, then either wait for some time or report to Mojang on the official Minecraft forum. https://www.minecraftforum.net/forums/minecraft-pocket-edition

Hit sign in button, then restart mc, and when you are back, you are logged in.
