As you can see by the picture, any block that I can break that drops something also drops an emerald. However, you don't get the emerald when collecting, so what is going on?

No, the emerald is just an MCPE bug, the emerald bug is from the villager cause when you trade with villagers in your world, you can see theres emerald appears on the villagers head.

Yea it's a MCPE bug hopefully 1.0.5 or 2.0.0 comes out quick so there can be bug fixes :D
